Inspired by Bulgarian cuisine, Mekitsi is reminiscent of fried dough at the fair. Mekitsi is a delicious breakfast, but is best to eat right away!

Ingredients:
2 1/2 cups of flour
1 cup warm water
1 1/2 tbsp active yeast
Pinch of salt
2 tsp sugar
Spoonful of yogurt
1 egg
Directions:
Mix yeast and warm water, then add in the egg and yogurt and whisk together. Add in flour, salt, and sugar until the consistency is kneadable. Neither sticky nor dry! Once fully kneaded, cover and let proof for about one hour, or until doubled.
Once your dough is proofed, roll out your dough into a 1/2 inch thick square and start cutting round pieces. I use a glass to cut in and make the circular shapes. Flour is needed is needed so the dough is not sticky.

Bring oil of your choice (sunflower or vegetable) to a gentle boil. Once it's hot enough, place the dough circles in. Turn on each side until golden brown. Dust with powdered sugar or a savory cheese.
Eat warm and enjoy!
